Giling Basah Process
Traditional Process

The Art of Giling Basah

Wet-hulling — or Giling Basah — is an indigenous processing method that produces the heavy body, low acidity, and distinctive earthy, herbal notes Indonesian beans are celebrated for.

The parchment is removed while the bean still has 30-35% moisture, creating a unique enzymatic reaction that defines the Indonesian coffee character.
